Another way to taste Dinant

Dinant has more to tell than its couque biscuit. Flamiche adds a savoury side to the city's food discoveries: a hot tart combining bread dough, cheese, butter and eggs. It is not the leek flamiche known elsewhere. Here, boulette cheese is central and gives the filling its particular character. The Dinant guild's recipe.

The Royale Confrérie des Quarteniers de la Flamiche Dinantaise, founded in 1956, helps pass it on through meals and ceremonies. Its foundation is not the dish's birth: it marks an organised defence of food and folklore. That collective role is a story in itself: a tart becomes an occasion to gather, sing and tell of one's city. The guild and the Disnée.

Few ingredients, plenty of presence

The published recipe uses thinly rolled bread dough topped with crumbled boulette de Romedenne, farmhouse butter and seasoned eggs. Baking in a hot oven binds everything and colours the surface. Boulette also recalls movement between Dinant and its neighbouring countryside: an ingredient can travel without every recipe losing local identity.

To taste it, choose a piece with both edge and filling. Dough provides structure, eggs bind and cheese asserts character. Let the heat become comfortable before eating: a scalding tart prevents you distinguishing nuances. A little salad can offer contrast without claiming to alter the reference recipe.

From folklore to your plate

The guild traditionally associates flamiche with Savigny wine. That accompaniment is cultural, not compulsory: an alcohol-free drink lets you appreciate the dish just as well.

For a public meal or celebration, consult the current guild or tourism programme and check reservations. This article promises no daily sale. Allergies to eggs, milk and gluten-containing grains should be mentioned. For a purchased preparation, ask the professional about storage and reheating.
