Noix de Piétrain, seven spices and a guild
Around Jodoigne, Noix de Piétrain brings a local pig breed to the table: a salted, spiced and air-dried cut of ham, neither cooked nor smoked.

A noix that comes from ham
Noix de Piétrain does not grow on a tree. Its name denotes a ham cut prepared with sea salt and seven spices. It is connected with Piétrain, a Jodoigne village in the Nivelles district. Destination Brabant wallon presents it among products revealing local expertise. Behind a thin slice meet a place name, a pig breed and a precise preparation.
The pig with four hams
The Piétrain breed is known for developed musculature, hence its nickname the pig with four hams. The breed name travelled far beyond the village, but the speciality retains Jodoigne roots. The Confrérie de l'Ordre du Cochon Piétrain, created on 31 January 1992, promotes this heritage. This is an association's date; it need not become the invention of all regional curing to explain its role.
Neither cooked nor smoked
The guild's presentation stresses this difference. The cut is macerated with sea salt and spices, then air-dried. It is neither cooked nor smoked. Its character therefore follows a different process from wood-smoked ham. This distinction appears first in production, before tasting impressions. Maker proportions and maturation conditions remain professional expertise; this article is not a preservation recipe to reproduce.
A guild representing its village
Heritage also appears through symbols. The guild's emblems include a pig carved in Gobertange stone, another characteristic regional material. The connection is telling: food and local stone can jointly carry a territory's identity. Public presentations and participating artisans keep that recognition alive. It is a human network around a product, not merely a label logo.
Discovering it in the right place
The tourist office lists stockists around Jodoigne; confirm availability directly with artisans. Thin slices reveal texture without burying identity beneath many accompaniments. For ingredients and storage, rely on the actual piece bought. The photograph's caption explains whether it depicts the product itself or an illustration of its food category.
