Pavé de Soignies, a cheese from Ferme Le Bailli

A soft red-rind cheese made at Ferme Le Bailli. Its Soignies name accompanies a contemporary cheesemaking story begun in the 1980s.

An identifiable Soignies cheese

Pavé de Soignies comes from Ferme Le Bailli on chemin des Théodosiens in Soignies. The producer's presentation describes a soft red-rind cheese within a wider farmhouse range. Its connection is precise: a farm in the municipality and district of Soignies. The name does not mean any cheese sold in town. It identifies a product and its maker.

From dairy farming to cheesemaking

The farm account dates cheese sales to 1988 and specifies processing milk from its own farm. APAQ-W confirms these contemporary cheesemaking roots. There is no need to invent a recipe inherited from a medieval bailiff. The interesting story is a farm adding processing to dairy work and gradually developing a range recognised under its own names.

A range that expanded

The maker explains how its offer grew from fromage blanc towards different textures and rinds. Pavé is just one of the cheeses made from the farm's milk. This diversity offers a useful visiting detail: one farm can work with several textures and maturation styles. Ask what distinguishes Pavé from other pieces available on your day. The maker's answer is more useful than an impression based on rind colour alone.

The character of cheese and rind

Pavé belongs to a range from shared dairy work, but each cheese keeps its structure and maturation. Rind contributes appearance; whether to eat it depends on maker instructions. Plain bread can accompany without defining identity. The Soignies name refers to an identifiable product and farm, not a claim that one taste sums up all Soignies production.

Buying with the right information

Consult the farm website, then confirm Pavé availability and reception arrangements. Farm sales do not grant unrestricted workshop or livestock access. Ask about milk type, storage and precautions appropriate to your circumstances; we give no individual health advice. This profile describes a product without selecting a restaurant. The photograph shows Saint-Vincent Collegiate Church in Soignies: a documentary landmark of the town named by the cheese, not an image of cheese or production.
