Haneffe lamb ribs and the Schalenbourg farm

In Haneffe, Cécile and Caroline Schalenbourg connect livestock, cereals, a butcher's workshop and direct sales. Their lamb ribs bring a firmly savoury plate to Hesbaye's local food culture.

A farm product, not an invented designation

In Haneffe, in the municipality of Donceel and the Waremme district, the Schalenbourg farm reveals a savoury Hesbaye beyond sweet treats alone. APAQ-W recognised its lamb ribs in 2021. This is a specific farm product, not a protected speciality attributed to the whole district.

Cécile and Caroline took over the family farm in 2012, according to APAQ-W. They developed sheep farming alongside crops. Cereals and hay feed the flock. That relationship between fields and animals makes terroir tangible, beyond rural label decoration.

From livestock to a cut to cook

An on-site butcher's workshop makes use of the meat locally. Ribs are a cut associated with the rib section, prepared according to presentation and butcher advice. APAQ-W names them for barbecues, among other uses, and notes seasonality. Ask what is available rather than assuming a permanent order.

The cut invites attention beyond lamb's most famous pieces. Bone, meat and fat contribute to the culinary experience; cutting and seasoning matter. Potatoes and vegetables offer a simple way to understand it without a dominant sauce. This serving advice is not the farmers' official recipe.

The farm as a place of transmission

Terres-de-Meuse Tourist Office describes a diversified farm with sheep, poultry, arable crops and a shop. Several connected activities emerge rather than a shop detached from what it sells. Asking where a precise product comes from naturally explains their complementarity.

Education also belongs to the site. VISITWallonia describes activities around agricultural work and crops. That does not mean every installation is freely accessible daily. Check appointments and programmes directly, distinguishing visits, children's activities and shopping.

Planning a food discovery

Consult the farm website for reception and contact. Specify cut, number of diners and cooking method; professional advice is more useful than a universal cooking time. Then follow instructions for transport, storage and preparation.

The photo depicts grilled lamb ribs as a culinary example. It shows no identified Schalenbourg product or plate made by Cécile or Caroline. This article introduces a precise farm supply chain and appealing cut while keeping clear the link between what the image illustrates and what the producer actually offers.
