A salad with substance

Forget lettuce leaves for a moment: salade liégeoise belongs to the family of all-in-one meals. Potatoes, green beans and pieces of bacon make a nourishing plate, enlivened by shallots, onions and vinegar. The Pays de Liège tourist office also presents it under the name potée liégeoise. Often associated with cooler days, it can be made throughout the seasons. The Liège tourism recipe.

There is no single birth certificate for this kind of home cooking. Its interest lies instead in the art of combining accessible ingredients into a meal. Potatoes bring a gentle flavour, beans a vegetable texture and bacon a salty accent. Its local character is well documented in tourism material; there is no need to invent a founding chef or a spectacular date.

Separate cooking for the right result

In the tourist office's preparation, the potatoes and beans are cooked separately, then drained. This helps keep the vegetables firm and avoids a waterlogged mixture. The bacon browns in a frying pan before the onions and shallots are added. Everything is then brought together and seasoned with vinegar. The steps are simple; their order matters more than elaborate presentation.

Look for contrast: the salad should retain several textures, not turn into vegetable mash. Add the vinegar gradually and taste as you go. Its role is to lift the dish, not hide the flavour of the beans. At home, adjust the quantities to suit your appetite without presenting your version as the only permissible one.

A distinctly Liège discovery

First taste a potato with a piece of bean, then add some bacon: you will immediately understand the role of each ingredient. An alcohol-free drink is perfectly suitable; the dish stands on its own and requires no compulsory pairing.

The traditional version described here contains pork. If making a vegetarian adaptation, state the change clearly and find another way to provide salty depth and texture. If buying it ready-made, ask about the ingredients and storage instructions. This article celebrates a Liège speciality without attributing its production to any particular establishment.
